Spark Coach Challenge - New Handbag (recipes and photos)

I bought a new handbag yesterday!

My mom got it for me for my birthday. I bought it, then she paid for it.

Part of the Spark Coach Challenge today is preparing meals ahead of time. I have my lunch packed for the next three days. I also have it already tracked in my tracker.

I made Pepper Steak which is a family fave. My mother has been making it as long as I can remember. It was a recipe she got from a cookbook that came with an electric skillet her and my father received as a wedding present in 1976.

1 and 1/2 pounds steak strips
garlic powder (to taste)
2 T. butter
1 cup onion
2 green peppers
2 large tomatoes
1 cup beef broth
1/4 cup water
2 T. flour
2 T. soy sauce

Melt butter in skillet, add garlic power and steak. Cook till browned. Add onions and green pepper. Cover and cook till wilted. Then add the tomatoes and beef broth. Cover and simmer 15 minutes. Blend water,soy sauce and flour till smooth. Add to steak mixture. Cook till thickened. Stir occasionally.

I omit the butter. I don't like butter, so I don't use it.

Each 1 cup serving has
181 calories
7.8g of fat
8g of carbs
18.9g of protein

I serve it with brown rice (1/4 cup for me) but that is optional.

I also made pumpkin muffins to share at work. They are very simple.

One 18.25-oz. box moist-style cake mix (Spice Cake)
One 15-oz. can pure pumpkin

Mix together and divide into cupcake papers. I was able to get 18 muffins. The recipe says 12 and that is 183 calories. By getting 18, I took it down to 122 calories.

A very nice moist muffin. I froze some and am taking the rest to work to share, along with the leftover pepper steak. That makes a lot, and my boyfriend won't eat it.

    The muffins sound great. I might make some for our local university tennis team. I always bring treats for them to their meets.
