“Infamous” Bacon Chocolate Chip Cookies Recipe

From “The Food Lovers Make it Paleo” Cookbook

5 slices nitrate-free bacon
¼ cup pure maple syrup
3 cups blanched almond flour
1 tsp baking soda
1 tsp salt
2 eggs
½ cup pure maple syrup
1 tsp vanilla extract
½ cup coconut oil, unrefined
1 ½ cups 72% dark chocolate chips

Prep time: 20 minutes
Total cook time: 35 minutes
Makes approximately 24 cookies

Preheat oven to bake at 350 degrees F. In a medium size mixing bowl, toss bacon in ¼ cup of maple syrup. Lay bacon on parchment-lined baking sheet. Bake for 20 minutes. When done, remove bacon from oven and allow to cool. Crumble candied bacon for cookie batter and set aside.

Heat oven to 375 degrees F. In a medium size mixing bowl combine dry ingredients. In a small mixing bowl beat eggs, ½ cup maple syrup and vanilla extract with hand mixer. Pour wet ingredients into dry mixture and beat with hand mixer until combined. Add melted coconut oil into batter and continue to blend until combined. Stir in chocolate chips and candied bacon. Drop balls of dough on parchment-lined baking sheet, about a tablespoon in size.

Bake cookies for 15 minutes at 375 degrees F. Let cool and serve.

(Notes: I baked bacon first then crumbled it and mixed with syrup and re-baked. Worked out just fine.)

    Oh, my! I'd never think to include bacon in chocolate chip cookies. But the salty combined with the sweet - yeah, I can see it working. I mean, I like bacon with "maduros" (ripe plantains, which are sweeter than the green starchy ones) topped with maple syrup. So...Bacon chocolate chip cookies? Why not! OOOG! The sodium and cholesterol!
