Mixed berry pie

Monday, March 25, 2013

We had some friends over for dinner last night, it was the third time we have invited them but either their 4 month old or our kids were sick, so we kept deferring for a later date. Having company meant a nice dinner and dessert. When they had their baby (on Halloween), we made them Thai Chicken Pizza (from the California Pizza Kitchen recipe book) which they really liked. So this time we went back to the CPK book and I made the Sante Fe pizza (lime grilled chicken and caramelized red onions, no sauce, then topped with fresh salsa and guacamole after it comes out of the oven), a mixed greens salad, and berry pie for dessert.

It is a little early in the season for berry pie, but that was my DW's request, so I went to the local grocery to see what was available. I kind of merged about 3 different pie recipes. Does that make this a bit of a Frankenberry pie? I like pie, and this was one of my better creations, so I thought I would share. It is on the spark recipes at the link below.

At nearly 350 calories a slice, this is not an everyday pie or a diet pie. Making and eating it may require you to get in a few extra miles, but I can attest that it will be worth it!

We had a nice evening with our friends, who enjoyed both the pizza pie and the berry pie!

I call mixed pies like that "Happy Pies" because making them makes me happy.

Eating them makes me happy. Getting together with all their friends makes the fruit happy.
Wishing you joy!

Yummy! Berry pie is my favorite type... might consider this one on my long run day.

Sounds tasty! I love mixed berries. I just buy them frozen when they're not in season and thaw out 3/4 cup portions and eat them as snacks. Only 60 calories each and good for you too! Of course, they taste much better when baked into a pie... emoticon

Pie can be an everyday treat... when you track it and you move it (as in burn calories like you do)!
Thanks for sharing your recipes - I love trying new ones...
Love the Frankenberry pie! Cool!!!!

Gonna pass on the pie (it would give me an excuse to have ice-cream) but it sounds great! Congrats on your publication being accepted. Curious about what you wrote about

You've got a good handle on a reasonable way to approach eating. And you sound like you've got a lot of great cooking experience. It's my DW who makes the pies around here, and they're rare treats. I'll share your recipe with her.
