Soup of the Week: Minestrone!

In the fridge: celery, carrots, onion, red and yellow and orange bell peppers, parmesan cheese.

In the freezer: three skinless boneless chicken breasts, corn and peas.

In the cupboard: canned diced tomatoes, whole wheat spaghetti noodles, canned mixed beans (fava, chickpea, kidney), rosemary, oregano, basil, red pepper flakes, salt.

What a great soup! I had a tiny "taster bowl" before heading to the office for about three hours (sob, sob: waaaay too much to do) and then (yay!) out for another spring ski.

It was amazing how much the weather had changed from yesterday: much warmer at +3C, with lots of green grass under the huge old oak trees and spruces, and plenty of animal tracks everywhere. Definitely hibernation is over for the rabbits who seem to be feasting under the trees! And I had to laugh at the Canada goose foot prints, a kind of avian snow shoe trail!

I'm pleasantly achy through my shoulders and arms from a terrific workout . . . and so aware, it could be the last of the season. Golf soon: it's fun to think about that too as I swoosh down the fairways!

Tomorrow at the gym I'll aim for upper body weight lifting to stretch things out a bit, and then a soak in the whirlpool!

Chicken, potatoes and beets baking in the oven . . . plus some asparagus. And I'm thinking: I've earned a glass of wine!

I've got a tough week coming up: but what a lovely weekend.
