Meal Plan for 3/23/13 through 3/29/13

Well, here in Colorado it sure felt like spring for most of the week. Lovely weather. But then, it’s going to snow tomorrow, ha! Our weekend trip to Wyoming was fun, but we didn’t end up getting back until very late on Sunday night so my meal plans shifted around a bit. I didn’t end up making the Chicken Tikka Masala so it’ll be repeated this week. J is staying home this week, but other than that, not a whole lot else to report, so I’ll get on with it:

DINNER: Chicken Tikka Masala (write up in last week’s blog)

DINNER: Hockey game! But I’m going to try and eat beforehand and just have a snack afterwards to avoid having an entire dinner at the arena.

LUNCH: Most likely leftover Chicken Tikka Masala, assuming there is still some left.

DINNER: Chicken Pesto Lasagna Rolls - traceysculinaryadventure
. I have made these a few times before, and they’re very delicious and super easy to put together. Plus, they reheat really well, so they’re great to give to people when they’re sick or just had a baby. I like them too because they’re already in individual serving sizes. Assuming 14.5 oz of chicken (more than the recipe calls for), each roll is 463 calories. I will be serving with a simple spinach salad.

LUNCH: Leftover Chicken Pesto Lasagna Roll

DINNER: Taco Salad – I don’t have a recipe for this as I’m just going to wing it. J requested this, and I absolutely HATE taco salad. So, I’m making the salad for him, and just making ground beef tacos for me using the meat and salsa and a bit of cheese. I’ll have a plain salad on the side.

DINNER: Not sure yet as J will be at hockey, I’ll just rifle through the leftovers in the fridge for dinner

DINNER: Teriyaki Chicken with rice and steamed broccoli - www.chow.com/recipes/305
This is a pretty easy and simple recipe for making my own teriyaki chicken versus using a bottled sauce. Easy sides of rice and steamed broccoli makes for a quick dinner. Total calories for all components is 419. I’m going to have it make 4 servings, using 18oz of chicken.

LUNCH: Most likely Chipotle

DINNER: We’ll see!

    Amanda, once you mix up the chicken in with the pesto and ricotta it's a pretty thick mixture, so it doesn't squeeze out. They definitely freeze well, I might make a double batch myself to save for another time, or freeze individually to use on those days when I don't have leftovers for lunches.

    I've never made lasagna rolls as I always thought that the filling would squeeze out. I guess it doesn't? Surely they wouldn't be all over the net if they did. I'm thinking they would be great to make a double batch and freeze half.
