Batch Cooking

It was a productive day. I made several batches of DIY taco seasoning, ranch dressing mix, onion soup mix, fajita mix and hot cocoa mix. Then I went for a walk 2 1/2 miles. I enjoyed putting those together so much I decided I wanted to do some "batch" cooking. So one trip to walmart and about $125 later I got home and started putting things together. I made two meals of each -Bacon Ranch Chicken (pinterest), Cilantro Lime Chicken (pinterest) Green Chili Enchiladas (pinterest), Meatball Sub Meal "kit" . I also made fresh salsa. There are several other food items included for that $125) I used to *always* spend Wed's putting together freezer and crockpot meals. Somehow I got away from doing it. I cannot tell you how happy it makes me to see my freezer meals all ready to store so I enjoyed doing it again today I hope to do some baking Friday morning.

I did hit a snag-the kitchen sink/dishwasher is messed up Soooo every dish is dirty-the kitchen looks rough. Tommorrow I will have to heat the water on the stove and then handwash it all. That's ok. Especially if it rains :)

My next food project will be to make my own "cream of.." soups.

The # on the scale is slipping down! I am approaching that 10 pound mark! Wooo Hooo.

    What an awesome day! I'm glad you felt motivated enough to tackle some major batch cooking! I usually can do well enough to put together one dinner/lunch combo for the week and just stick with that.

    Sounds like you had a very productive day, way to go. I love to make soup in big batches that last me the whole week.

    I use to have a SUNSET cookbook called "MAKE A MIX COOKERY" that had a lot of fast and cheap ways to make mixes and save money.
