So for this round, I made this Hearty Chicken Chowder: ladolcivita.blogspot.com
I do not have a picture as I forgot to take one, but it wasn't the prettiest looking dish either, so it's probably OK :)
I doubled the recipe so we would have leftovers. Each large 2 cup serving was 477 calories, I didn't make any changes to the recipe. I did use center-cut bacon to save on some of the calories there. You could reduce the serving size to decrease the calories, and while I went ahead and used the heavy cream, you could probably use milk or half and half instead, to save on the calories there. But for me, 477 calories was perfect, and is on the low end of what I usually have for dinner.
Overall, while there was nothing really wrong with this recipe, I'm not sure I'd make it again, especially on a weeknight as it was a bit time consuming. I am also not a soup/stew person so that could be the problem. If you are into soups/stews then you would probably like this, as the flavors are pretty good. I will also eat my serving of the leftovers for lunch tomorrow with no problems.
