St. Patrick's Day - when Christians commemorate the man who used the shamrock (clover) to teach about the triune God.
So today, I prepared the same menu that I always do for March 17. Oh, I know. I hear the nutrition purists among you clucking about the high fat and sodium content of corned beef. But this is TRADITION. And it is a TREAT. It's not my normal fare, and I planned the rest of the day around this meal. I choose not to track sodium, though I (mostly) make conscious choices to keep my intake well below average, though I probably do eat 2.5-3 grams per day.
My choices today kept me well within bounds for what I planned to eat. Of course, it did not allow me to eat what I WANTED to eat - which was seconds and maybe even thirds. That's what I would have done before SparkPeople, and today I stopped after my one and only serving. Yummy, and well worth what I didn't eat today because of my special meal.
3 oz corned beef, 1 medium potato with 1/2 Tbsp butter, 1 c cooked cabbage. Drizzled over the meat and cabbage 2 tsp spicy brown mustard. And I savored every bite!
