Butternut squash

After finding out about what the different squash were at the market I picked up butternut squash, as that is the one used in some Plan recipes.



Being as unfamiliar with it as I was, I watched a u-tube video to find out how to prepare this thing :)

Halved and one piece scooped


Cut up in chunks


Making soup!


Delicious lunch (I had a side salad as well)


There are 2 ways to have the soup chunky or pureed. I took out half the soup and pureed the rest. here are some portions for my freezer:



For dinner I added some chunks of butternut squash to my beef stir fry, it was a nice sweet addition. I think butternut agrees with me as I was down half a pound this mrorning :)

    Squash is on our menu at least 4 nights a week. We especially like Spaghetti squash and we use it instead of wheat pasta. Great meal and low kcal to boot.

    I still can't figure out how you cut it without using a chain saw. I always wind up baking the whole thing. Or if I must chunk it, I steam it until my old meat cleaver does some damage on it. I'm glad I didn't get rid of my meat knives. I will try your soup. I haven't ever tried anything like that. I bet you'd never find anything like that in any restaurant.

    I love what you did with it,
and I usually make an awesome butternut Squash curried soup!
It is my favorite squash for sure!

    I love butternut squash, especially as a soup. I Just boil a cubed squash in veg stock with an onion, add a shake of cumin and purée. Yum!
