After finding out about what the different squash were at the market I picked up butternut squash, as that is the one used in some Plan recipes.
Being as unfamiliar with it as I was, I watched a u-tube video to find out how to prepare this thing :)
Halved and one piece scooped
Cut up in chunks
Delicious lunch (I had a side salad as well)
There are 2 ways to have the soup chunky or pureed. I took out half the soup and pureed the rest. here are some portions for my freezer:
For dinner I added some chunks of butternut squash to my beef stir fry, it was a nice sweet addition. I think butternut agrees with me as I was down half a pound this mrorning :)
