Well my bad week streak is offically over. Yesterday I spent a lot of time in the kitchen (well longer than normal) and was even able to treat myself to a blizzard, without going over my calories.
Yesterday morning, I started the day by making 100 calorie Blueberry Muffins. I had two of them and they were pretty good. I"ve got a few ideas on how to tweak them next week. They are not a bad option for quick and easy breakfast ideas.
For lunch, I went to Subway and got a salad. Right now, hubby and I are on opposite schedules so on my days off he's usually asleep until 4pm and I'm wide awake at 8am.
Then before dinner, we went to the pool at the local gym and did some water training for about 45 minutes. Mainly we just walked back and forth across the pool with a few races in between. He beats me every time we race but I was close at the halfway point this week. Maybe another month or two.
Then for dinner, we had Island Chicken with a Mango/Pineapple Salsa. It was an interesting recipe and I think it turned out great. I think I may have needed to chop the fruit up better for the salsa. Overnight, I cooked up some cilantro lime chicken for tacos for the week. It was a lot of preparation yesterday but It was nice to be in control of the food going in my mouth and not letting McDonalds or PIzza Hut control it.
