Healthy Dinner

Im sure many of us have experienced the issue where you have friends that usually eat junk, but now we are all embracing our healthy new lifestyles, it is a challenge to convince these friends that if you cook for them that the food will still be worthy of consumption and you have to make a promise not to serve up quinoa with lettuce leaf compote lol. Well I have two friends like that, who believe a meal is not complete unless an animal was slaughtered in the process and part of the prepartion process was defrosting it from your freezer...neither of which im big fans of in my cooking. I made them baked chicory, tomato pasta and then drunken grapes (sans vodka as one of the girls is pregnant), and they devoured it. I didnt have the heart to tell them it was both vegetarian and healthy!! But I guess it shows that with a little creativity and concern for your guests tastes it is possible to make them happy! And in my eyes it sure beats their cooking...last time i had dinner at their house we had cheese soup for dinner with sausage....I dont know about you but its certainly not something i would ever choose from a menu!

    What is chicory? And I would LOVE to know how to make drunken grapes, both virgin and slutty :) Sounds yummy!
