After a full day with snowboarding (with my 4 year old) then coming home and going on a run with the two littles in the jogger (the DW needed a break from sick and winey kids). With 2.5 hrs of snowboarding, and 50 min of running, my exercise tracker was up to almost 2000 calories for the day! What do you eat after that?
Well, I came home and made blackened chicken lime quinoa for dinner ( recipe from: http://www.sarcasticcooking.co
cken-and-cilantro-lime-quinoa/ ) followed up by strawberry rhubarb pie topped with a scoop of vanilla ice cram (recipe from: http://allrecipes.com/Recipe/S
Detail.aspx this isn't the recipe I use, but is pretty close). The pie is one of my DW's faves, and I kinda like it to.
I know my DW had a rough day, hope taking the littles for a while then making a fave dinner and dessert helped!
