Big day followed by great dinner

After a full day with snowboarding (with my 4 year old) then coming home and going on a run with the two littles in the jogger (the DW needed a break from sick and winey kids). With 2.5 hrs of snowboarding, and 50 min of running, my exercise tracker was up to almost 2000 calories for the day! What do you eat after that?

Well, I came home and made blackened chicken lime quinoa for dinner ( recipe from:
cken-and-cilantro-lime-quinoa/ ) followed up by strawberry rhubarb pie topped with a scoop of vanilla ice cram (recipe from:
Detail.aspx this isn't the recipe I use, but is pretty close). The pie is one of my DW's faves, and I kinda like it to.

I know my DW had a rough day, hope taking the littles for a while then making a fave dinner and dessert helped!

    Strawberry rhubarb pie...oh man that makes me miss Wisconsin so much. It's so hard to find rhubarb around here and it's generally not very good. They cut the stalks down and only sell the fully red-pink kind, not a mix with any green in it. The stalks are so short, usually only a foot long...yeah. Back in WI, we used to make strawberry rhubarb crisp, and strawberry rhubard jelly... :D Thanks for the memories! :)

    Sounds like you like making new recipes. Me too! My wife sometimes thinks some of my concoctions are a little too spicy, but sometimes I get it just right for her.

    What a day! And what a great meal! Thanks for sharing the link! DH got a new smoker this past week and smoked four whole chickens so we are looking for new recipes QUICK! So glad to hear you spoiled DW - though I'm sure it's reciprocated!

    The opinion of a mom of 2 would definitely think it helped lift your wife spirits. I LOVE it when my husband takes the kids out by himself, even if it is only for an hour. Small gestures like this mean more than any store bought gift.
