Time for a breakfast post. One of my favorite breakfasts is lots of veggies, held together with scrambled eggs and topped with cheese. To call it a veggie omelette just wouldn't do justice!
It's a whole cup of fresh spinach, 1 Tbsp scallions, 1/3 cup chopped mushrooms, 2Tbsp chopped peppers of whatever color I have on hand. 2 eggs and 1 oz of cheese. Plus 4 oz low sodium V-8. Three veggie servings in all. Relatively high fat, I know, so I don't do a lot of fats the rest of the day.
