Team Challenge - Day#6

Time for a breakfast post. One of my favorite breakfasts is lots of veggies, held together with scrambled eggs and topped with cheese. To call it a veggie omelette just wouldn't do justice!

It's a whole cup of fresh spinach, 1 Tbsp scallions, 1/3 cup chopped mushrooms, 2Tbsp chopped peppers of whatever color I have on hand. 2 eggs and 1 oz of cheese. Plus 4 oz low sodium V-8. Three veggie servings in all. Relatively high fat, I know, so I don't do a lot of fats the rest of the day.

304 Cal, 12 Gm carbs, 19 Gm fat, 22 Gm protein

    Thanks for posting pictures of your food and including how to make it. It looks super yummy! I do something like this and I sauté the veggies in the iron skillet then once they are a little tender, I pour some beatened eggs over the top then pop it into the oven. I like to put some shaved Parmesan on top of mine. I'll put the cheese on top when I put it in the oven. Then I watch for it to puff up to know it is done.

    This is the way I like to eat. Yours looks so good! All the green sticking out with the orange cheese makes it look so healthy and inspiring. Great way to start the day!

    Sounds sooo good! I like low-sodium V8 a lot more than the regular. Your picture looks good, too.
