I just had a slice of this pizza and I am so full. Actually it wasn't so much a slice as it was a SLAB! This was one serious pie and if you have any phobias about carbs or wheat, look no further lest ye be trumatized.
I made the vegan corned beef yesterday It's a big seitan roast simmered with all the proper spices and it really did remind me of corned beef, or as close as I can remember after 30 years.
Here's a tower of the slices. [ I see some reuben sandwiches in my future.]
I was originally just going to do a regular pizza crust, but then decided to make Irish soda bread as the base of this pizza.
I made a traditional Irish dish called colcannon, mashed potatoes with lots of kale, leeks, and cabbage mixed in. That went on next.
Then I chopped up some of the seitan corned beef and spread that around.
Then I topped it all with vegan cheese and some chives.
Look how thick it is!
I served it with hard cider; and I'd forgotten what a lightweight I am when it comes to anything alcoholic! Nothing lightweight at all about this pizza. It was really good but I'll have lots of leftovers. It'll be great with a tofu scramble tomorrow morning.
So there it is, traditional St. Patrick's day fare in a not-so-traditional package! That's vegan pizza #43!!!
