Time to experiment with some new veggies. With st. Patrick's Day coming up I was thinking green... but I live in Mexico... so here's a mexican spin on irish green :)
Tomatillos - great for making green salsa (salsa verde)
It is simple to make and oh so tasty.
Cilantro, garlic, onion, tomatillos and of course jalepeno
It was a little bland, so I added another jalepeno :)
1/4 onion, 6-7 tomatillos, 2 jalepenos, 2-3 cloves of garlic and 1/4 cup cilantro
It is great to top almost everything - omelet, salad, any kind of meat and of course burritos (DH's favorite!)
