This week our 5% challenge in addition to racking up exercise miles is to eat a healthy breakfast and look up a new Spark people recipe each day. Well, I already looked up one this morning for pumpkin spice oatmeal. I am, however, having a piece of whole wheat toast with cheese because it is shopping day and my cupboards are bare. I don't even have a piece of fruit left to have with it. I do have oatmeal but I am out of milk. Anyway, I thought I would share one of my favorite breakfasts. An avocado egg tostado. I just heat up a corn tortilla, then top it with either some sliced avocado or a 100 calorie pack of spicy wholly guacamole. I then top it with an egg fried in a non-stick skillet. That's it. I could add some cheese but the avocado gives it enough fat and enough flavor that nothing else is necessary.
