I have made great improvements since my last blog entry which I am very happy about! I am not letting that one bad meal make me feel crummy anymore, and I am moving on. I have been eating great this whole week which feels so good. I have even been hearing some positive comments from my boyfriend about the lighter, but still delicious meals we have been having which is always a good positive boost. Just two of the selections from this week were creamy spinach enchiladas (245 cals for two) and mini pita chicken, pineapple and jalapeno pizzas (250 cals for two).
I am an avid Pinterest fan in my free time, and by far my favorite find for this week is a recipe for Cookie Dough Flavored Greek Yogurt!!! mmmmmmm I want some just thinking about it now....
There are many recipes out there, but the one I use is:
- 1/2 cup fat-free Greek yogurt
- 1/2 Tbsp creamy peanut butter
- 1 Tbsp Splenda
- 1 tsp vanilla extract
- 10 chocolate chips (or 20 mini)
Mix all the ingredients together and enjoy! You can even half the recipe because it is quite filling.

Sat Fat 2g
I LOVE LOVE LOVE how low calorie it is for all the protein you get! This will definitely be my new favorite "dessert" for awhile :)
