As Spring comes around again, my motivation is renewed and I am readying myself. I have not ate meat or gluten at all this year. Which this brings new challenges for me. I used to hate veggies, now, can't live without them. I am on a limited income and have a hard time fixing dishes for dinner that my family will like and afford. Our biggest problem is that we love cheese, too much. Trying to find alternatives and cut back altogether is hard. I stay dedicated and try a new recipie as our budget permits. Our food must be gluten free and vegetarian.
