Spring is coming

As Spring comes around again, my motivation is renewed and I am readying myself. I have not ate meat or gluten at all this year. Which this brings new challenges for me. I used to hate veggies, now, can't live without them. I am on a limited income and have a hard time fixing dishes for dinner that my family will like and afford. Our biggest problem is that we love cheese, too much. Trying to find alternatives and cut back altogether is hard. I stay dedicated and try a new recipie as our budget permits. Our food must be gluten free and vegetarian.

    I'm cooking "two ways" too. Wheat free for me - with less red meat and more conventional for hard working hubby. He has come on board with lots of my healthier fare. So I feel for you.

    I am blessed to have a local store who carries deeply discounted fruits and vegetables. They are the same items and packaging found at a local "fresh market" . . . but I'm paying way less. They don't have the huge variety that a market would have - but its a good variety. I hope you'll find such a store near you. It is truly a huge cost saver.

    Great job!! It's no easy task trying to prepare vegetarian, gluten-free, healthy meals that your kids will eat. Especially when there are financial restraints! Wish I could lend some tips but I have a hard enough time getting mine to eat at all! LOL I'm glad to hear you are on the right track. emoticon emoticon emoticon
