Ugh crazy morning

My tire was nearly flat! I guess the good news is it wasn't completely flat. I need to get it checked but this weekend is out because I'm taking care of my Dad while my Mom is out of town. Maybe next Tuesday. I'm off work but my Mom will be back Monday night so Tuesday will be for errands and getting myself back on track etc.

I'm cooking for my Dad while my Mom is away. I'm more nervous about that than giving him his meds and tests! He's so accustomed to my Mom's cooking and she is a great cook that I'm afraid he's going to hate mine. I cook healthier than her but I am not nearly as intuitive as she is. I have some decent recipes though I just haven't nailed down which ones I want to fix. Thursday after I make him an omelet and toast for breakfast I'll head out to the grocery store with a list. I know for sure I'm going to make this healthy fettucine alfredo recipe I saw and I'm pretty sure as long as I have access to my Mom's HUGE kitchen I will make sweet potato butter. I think he'll really like that. I figure if I roast a turkey breast and make some savory cranberry biscuits it will be a great meal with some nice leftovers for sandwiches etc. Turkey, stuffing, green beans with shallots, savory cranberry biscuits and sweet potato butter. Sounds like a great meal to me! Maybe I'll fix that on Friday. Thursday I'll probably make something with round steak since my Mom has TONS of that in her freezer!
