Go veggies. GO!!!!!!!

I've gotten 5 + servings of veggies per day this week. Thanks to a new family member, a Vitamix, we have begun making terrific veggie soups in 15 minutes or less most days this week. I like more crunch and chunks in my soup so I added veggies like cauliflower or broccoli florets to the bowl along with diced jalapenos and onions. Yummy. I love the roasted acorn squash soup, the cauliflower/broccoli cheese soup. The butternut squash soup was very bland to my taste. But, I must say that I feel more energetic at the end of this week than I did at the beginning. That bodes well for my improving health. Go veggies. GO!!!!

    I tried a lot of different ones trying to get the smoothness and had a lot burn out on me and drank/ate a lot of chunky smoothies until I went for the "big guy". Love my Vitamix and just got the grain container so now I can begin processing my own flours, etc. I add protein powder to smoothies and soups as well. And yes we still need to get that fiber! emoticon

    Very commendable! Just remember by processing fruits in veggies in any type of blender/smoothie maker you negate the effects of insoluble fiber in the produce. You'll still get the soluble fiber but you will have disintegrated the insoluble strands to the point that they will not be beneficial in your digestive tract. So it's definitely a good idea to add chunks back into a blended soup. ;)

    sounds like fun in addition to goodness!!

    try throwing some ginger or cinnamin type spice in your butternut squash soup- or some of those jalapenos!

    Oh, I so agree with you - the vitamix makes it a lot easier to eat more fruits and vegies. I love mine for smoothies, especially green smoothies - yum!
