I've gotten 5 + servings of veggies per day this week. Thanks to a new family member, a Vitamix, we have begun making terrific veggie soups in 15 minutes or less most days this week. I like more crunch and chunks in my soup so I added veggies like cauliflower or broccoli florets to the bowl along with diced jalapenos and onions. Yummy. I love the roasted acorn squash soup, the cauliflower/broccoli cheese soup. The butternut squash soup was very bland to my taste. But, I must say that I feel more energetic at the end of this week than I did at the beginning. That bodes well for my improving health. Go veggies. GO!!!!
