3 more veggie UK recipes - Sunday

Hello all,

I've been inspired by the week 3 flight to the UK challenge, to share some veggie food from the British Isles with you. So here are recipes 4-6, in no particular order:

UK recipe #4
From Yorkshire
Ploughman's lunch: a very traditional cold plate of crusty bread, good cheese, pickles and apple. A favourite pub lunch for vegetarians and those steering clear of deep fried fair.

Pea and mint soup: a refreshing summer soup, hot or cold. Delicious. Works without addition of any fat too.

UK recipe #6
Apparently from Holland and America:
Coleslaw: best made with sweet white cabbage, this is one of my favourites. A recent article in the Guardian details lots of recipes:

But I prefer this one, with a mediterranean twist, and lemon juice instead of mayonnaise. It makes a very satisfying, healthy and low-cal lunch, with smoked fish or a piece of nice cheese.

    ooohh, just saw these! Thanks for sharing. I think that pea/mint soup one is going to be printed out for this summer when I will have both things in the garden.

    Wow, those are all great recipes!! I myself love Cole Slaw, just something so great about the textures and the sweet/sour flavor. Delicious!

And I think I might want to try the pea and mint soup soon, but warm. I really just don't like cold soups. :)
