I tried two new foods today, amaranth and samphire.
Samphire is a kind of sea vegetable www.bbc.co.uk/food/samph
. I cooked that by steaming it. Having tasted it, I'd say it isn't bad, but it won't be in my top ten list of favourite veggies. I'll finish off the batch that I bought, but can't say that I will be buying it again.
The amaranth would have done better had I not salted the water at all. Even with the small amount I put in the boiling water, it came out tasting really salty. I couldn't eat more than a few bites.
Now that I know the texture though, I have some ideas for using it in food dishes in future.
I had these both with a couple small salmon fillets, pan-fried in olive oil.
I have gotten some ideas for ways to serve the amaranth in future. Tomorrow night I am fixing myself a couple lamb steaks. I'm going to cook up some more amaranth, let it cool and then stir in some cooked minced onion, carrots, mushrooms, and mint.
I'll use that as a stuffing inside the lamb. And have it along with another cooked veg, possibly more carrots or perhaps some mashed butternut squash.
Finishing up my evening with a mug of herbal tea.
I've been following the recommended foods using Metabolic typing for a week now, and one thing I have noticed is that I am eating half the amount I used to but going longer before feeling hungry.
