Raise the ROOF!! Its been a great week!!!
At the start of this week I weighed in at 143.6 pounds. YUCK!! But, I did expect it given the last couple of weeks. No big deal. It won't be around long.
Hubby and I cleaned out the fridge, tossed all the junk, and stocked it chock full of wholesome & fresh eats. We put a vegetarian meal plan together for the week and it. Was. Awesome!!
I felt satisfied every day, stayed with in all calorie budgets, had more energy, and got my house back up to par as a result!
Weighed in today at 138.8 almost 5 pounds lighter than Monday. Certainly not fat loss I know, but none the less feels great not feel so bbblllleehhhh, and to see the number back in a more comfortable range for me. More importantly I'm celebrating all my non scale victories this week!
1. Cooked at home all week
2. Tracked all my progress
3. I only had 2 diet sodas all week.
4. Even when temped to be bad I made a better choice
5. Despite my strong desire to crack a beer Wednesday I fought the urge and committed to not having any alcohol until I am well past finished with my antibiotics.
6. I made some amazing meals this week!!
7. I stuck to my vegetarian & clean eating plan
My goal is to get back down to where I was at the start of 2013: 132 pounds, and back in my jeans I was proudly walking prior to being sick, as well as getting back into a regular work out routine. I've been pinning a few good workouts on pinterest I think will be really helpful and doable.
Once I get back to 132 (which I think will be relatively easy) I will re-establish my original goal of reaching my ultimate goal weight 125. I hope to do this by my birthday (May 6th) but really as long as I am making progress, feeling good, and happy.. the date in which I reach my goal really isn't all that important to me. I have so much else to focus on, the number on the scale (even though I value it) does not define me. Its taken me many years to accept this, but it my heart of heart, this I know.

I realized cooking bagged beans in the crock pot is AMAZING and WAY BETTER!!
I downloaded some GREAT vegetarian cookbooks on my kindle and can't wait to try out so many of the recipes!
By FAR my favorite meal of the week (which hubby also RAVED about) was this southwest sweet potato dish. Cubed sweet potatos dusted in red pepper flakes, black pepper, cumin, lime juice, & a dab of honey: then cooked in the oven. Mixed with a medely of caramelized onions, crock pot black beans, corn, and cilantro. Topped with nonfat plain greek yogurt and trader joes no salt fire roasted salsa!! HOLY COW my taste buds were celebrating!! I'm eating for lunch today as we speak! YUM!
And lastly my yummy bfast I made all my work people jealous with. Egg white, spinach, tomato, basil, & mozzarella omlette :)
