Spaghetti squash with garlic spaghetti sauce, green salad
Yesterday I did not have E2 compliant bread for the mushroom burger and boy did my body let me know. I got lethargic. Hmm... perhaps there is something to this wheat thing and me. Whole grains do not affect me as much, but I am going to have to address this after completing the E2 challenge.
It was thrilling to still find spaghetti squash, While it is still available we will enjoy it weekly.
The liquid that pours out of the portobello when eating it as a burger has been an issue that we resolved last night. Or at least reduced, by removing the gills prior to cooking. Woo Hoo, no more soggy bun.
I'm off to meditate and watch the snow fall.
