What's for Lunch Today?

Today I had a late lunch so I didn't want to eat too much, but I also wanted some protein. So, I took what was in the fridge and made a quesadilla. I made oven fried chicken for the family dinner last night, I actually didn't even eat any lol, but there was tons of leftover chicken. So, when I made my quesadilla I took off the breaking before cutting it up. I used one tortilla shell, 120 calories, and spread one slice of skinny cow queso/fresco cheese on the whole thing. Then I took some of my homemade hummus and spread it on half the tortilla and then added the chicken. It was delicious :) For dinner, I used some of the same chicken to make tacos :)

Side note, I have been slacking so bad lately, and I know a lot of it has to do with my health, but it is making me a little depressed. I should have hit my 100lb mark a month ago and I'm still fluctuating the same 5lbs on a weekly basis. With hurting my back last week I was really afraid I wasn't going to be able to do anything this week at all. But thankfully, that is not the case. My back is doing 100x better today! So, I called my chiropractor, who is also my uncle, to see if it would be ok for me to go to Zumba tonight and he, not only ok'd it, he thought it was a great idea...and it totally was! I felt so good being able to work out tonight, and I was actually able to go at it full force for all but maybe 5min throughout. :D I also decided I needed a little more visual reminder/motivation so I bought a dry erase calendar to hang in my room and have wrote out what I need to do each day. I even included workout days for when I'm on vacation in TX, even though I know my sister already has some ideas planned for us. :) I'm ready to be back on track and FINALLY reach my goals. I told a SparkFriend that she and I are both going to reach our UGW this year and I am determined to hold up my end of that promise! I'm kind of thinking, when we both reach it, we should totally have a SparkPeople party. And don't worry, you'll all be invited :)

    I was thinking the same thing!! I did great today, I really buckled down. I skipped my workout to work some extra hours, but I'm about to turn on the Just Dance and shake off those calories! Lol. Nice call on the Zumba, that's one of my favorite workouts.
You reminded me, I need to re-do my calendar for March! I'm hoping to break my plateau this month and get down to 165. Don't let it get you down that you haven't hit that 100lb mark, that is a huge milestone. That's like me getting stuck around my 50lb mark. I'm just going to push through it!
