Move over Olive Garden! I just made the best spaghetti sauce with meatballs. My husband isn't big on pasta and doesn't like red sauce. But usually he'll struggle through when I make meatballs. But the sauce was so sweet and flavorful, and didn't taste too 'tomatoee' he said:-) He ate it all, though not big portions, we don't eat tons.
Step one cut an X on the bottom of each tomato and drop in boiling water 20 seconds, until you see the skin peeling off. Drop into ice water, then easily peel.
Here's what's going in, no mystery ingredients! Chopped tomatoes,carrot,red pepper,celery stalk,onion,4 garlic cloves,fresh basil,parsley and oregano.
Saute all but tomatoes in 1/4 cup olive oil 5 minutes, I added salt and pepper too
Add tomatoes,1/4 cup whitewine vinegar, 1tb sugar and 2 tsp Worcestershire sauce, bring to a boil, then turn down and simmer for 2 hours.
Use a blender or immersion blender to make a smooth sauce.
Now it's smooth! I did add 1Tb of tomato paste in a tube and simmered the sauce u til hubby was home added six meatballs just to heat through,
Tada:-) the finished masterpeice. I was oohing and ahhing all thru dinner. It was so good and I felt so successful!
