What are you doing to encourage yourself and keep on track?

In order to make this challenge a true success and get to the point where a healthy lifestyle is a foregone conclusion I must plan my eating in such a way that it won't fail.
My daily intake has to be foods that I enjoy and at the same time I want to introduce new, unexplored items. I terribly need to add more vegetables into the daily plan.
I have started a diary of sorts, a list of go-to meals.
They are divided into categories of Breakfast/Lunch/Dinner and include my family's favorites. I have a "make again" list, a party list, a holiday list, a fast cook list.
After suggestions from other SP members I have included at least one new recipe a week to my repertoire. This in itself is an encouragement because I have the opportunity to take a beloved cookbook down and dust it off. It's like getting together with an old friend.
My family has come to expect some pretty exotic menus (they don't always rate on the make again list, LOL) and enjoy looking over my different menu possibilities. I find this very rewarding because I know I am showing them the steps to eating healthy. Two of my three children have begun to enjoy cooking themselves.
