5% challenge questions part 2 & 3

The 2 questions from yesterday and today:

2. How will you do that? - I started Dr. Neal Barnard's 21 day kickstart vegan challenge

3) What are you doing to encourage yourself and keep on track? Well now this is tough but I am now on day 2 and spent time going through recipes, making veggies yesterday so that I will have them all ready cooked for the work week.

I tell myself...can't quit, it is only day 2, OMG I am stronger than this!

    Preparing the veggies ahead of time is a great Idea. emoticon
    I am lazy or have become wise so I buy already washed baby spinach, arugula and lettuce and carrots then all I have to is cut up peppers, cucumber and wash cherry tomatoes for salads.

    Preparing all your veggies for the week is the only way to go when you work. I eat mostly raw, so its a lot of washing, precutting and drying. I use green boxes for all my veggies and they really keep well in there without going bad. For cooking, Chef Meg's roasted root veggies can't be beat, make a big batch and enjoy them the whole week.
    Your body is going to love you for making this effort! You got the right ideas!!

    You can so do this....the first few days are the hardest then it all settles and by day 4 you will start to feel amazing and it will all flow from there

    You can do it! A good friend of mine did this with her husband before their wedding last summer - it was rough for the first couple of days, but you build great habits and get great results!
