I made this for Round Four of the At Goal & Maintaining + Transition to Maintenance team's What's Cookin', Good Lookin'? recipe challenge:
The theme for this round is fish and seafood and I wanted something that was simple, yet full of flavor. My husband and I both prefer our seafood without too many bells and whistles and this recipe definitely fit the bill. The only change I made was to use slightly less olive oil to save some calories, but there was still plenty of tasty seasoned oil to dip our bread in. I rounded the meal out with a nice peperonata and the flavors meshed perfectly with the shrimp dish. If you like shrimp, I'd highly recommend trying this.
