Egg White Quiche Muffins

I actually got the "recipe" for these on pinterest awhile back and decided to try them out for a good, and more importantly, healthy grab and go breakfast(or lunch) item.
Super simple just 3 Tbsp of egg whites - couple baby spinach leafs - red pepper and orange pepper - scallions - and a sprinkle of parmesan cheese
Put all the veggies and seasonings in the tins first then sprinkle in whatever seasonings you want. I used a little pepper, some red pepper flakes and rosemary.
Then just toss them in the oven @ 350F degrees for about 20 minutes...I lost track of time dancing around to Whitney Houston songs so not sure the exact length they were in the oven :)
Happy little muffins to take on the go!

Of course theres always the trial and error booboos lol. Next time muffin liners, more seasonings and maybe a bit more cheese
But overall Very tasty and can always add a little salsa, hot sauce etc when ready to eat!
