Back when I first wanted and decided to eat healthier, I eliminated all the whites-what pasta, white rice, white bread. And that was a good step, but then I expanded it to most carbs-grains were a no-no! Potatoes-not welcome on my plate! And fruit...no way no day. And though I felt I was doing a good thing being low carb for my son who has diabetes-some things were left out. Things that I hadn't paid attention to, such as -getting vital nutrients from them such as antioxidants. I was slimmer but had crow's feet and lines around my eyes. And brain power--well...being forgetful became the new normal. But I was not going to have an apple no matter how good it looked!
However since I have become vegetarian I see how much better I feel eating good carbs. I have even more energy and my skin looks better and I actually have more choices in food because I am eating more carbs-and even helping my son because good carbs like fruit help him too. Plus it is more satisfying to eat a banana than pop a potassium pill for leg cramps in the middle of the night!
So my friends, the low carb devotee has retired. Welcome back to my world...you have been long missed , admitted or not.
