I wanted to make Spanish Rice to go with our Spinach and Black Bean Burritos this week. I am cleaning out the kitchen, and I was out of rice. I had two bags of quinoa! I just substituted the quinoa for the brown rice. I was surprised that even the cooking instructions were the same. The exception was letting the quinoa set covered for 15 minutes, off the heat after it was done.
Delicious! I think I like it better than the brown rice I usually make it with.
