Yesterday I had some great food!

Breakfast is always the same: 2 eggs, a plate of fruit, water and coffee.

For lunch I ate at Panera. I had their "you pick two" with the Mediterranean salmon salad hold the olives, french onion soup with no croutons, and an apple. I was just going to drink water, but I had a free drink on my My Panera card so after I finished my cup of water, I had an iced coffee.

I really like this new salad. I am not a fan of salmon in general, but this is the way to have it in my opinion. The salad has oranges, feta cheese, and toasted almonds as well. You can have the half-portion with no olives for 270 calories.

Since it is winter and cold here in AL, I love having something warm for lunch so I almost always have soup. This french onion with no croutons is a good option. The soup itself is very hearty and they top it with a tasty shredded cheese.

Both this breakfast and lunch are around 400-500 calories and they really fill me up. I don't have snacks between meals (unless you count my coffee which i generally have just after the meal).

Dinner was a hodge-podge but a really good one. Last Saturday, I made chicken in the crock pot. I put in 6 chicken breasts with a bottle of a sun-dried tomato marinade. I cook around 4 hours until the chicken is done. It is super easy and and simple and we love the results. We ate this chicken on Saturday and then again on Monday and Tuesday.

On Monday night, to go with the chicken, I roasted some veggies - new potatoes with onion, peppers, garlic, olive oil, salt and pepper. It takes about 30-40 minutes in a oven at 450 and I love every bite. I had two servings on Monday night with chicken. One of the great things about being no sugar/no flour is that I can have more savory. I don't feel the least bit bad about having olive oil on my potatoes, onions and peppers.

Last night, to go with the chicken and leftover roast potatoes, I made mashed cauliflower. Have you guys had any luck with this? I had it in a restaurant once and it was super smooth, the texture was just like whipped potatoes. I have made it twice and the flavor is fine but the texture is more chunky. Next time I will put them in the food processor. My calories for dinner was only 327, the whole day to that point was around 1200.

My calorie goal is between 1390 and 1740 so I knew I could have something else plus after getting back from target, I was hungry again. I made one of my favorite snacks: black berries, raspberries, blueberries with a scoop of chobani vanilla yogurt on top.

    These are great ideas. Thanks. I made the cauliflower for my MIL for Thanksgiving one year because she wanted me to make it. I put it in the food processor and that is what makes the difference. Mixing it with cooked mashed potatoes will add some density to it too. emoticon

    The good old chicken in the crockpot trick is one of my favorites. I use thighs, though, and strip the meat from the bones. When things are going well, I make stock from the bones.

You are doing really well with the food. It's amazing how filling 1200 carefully chosen calories can be!

    Yum - now I'm hungry! I love roasted veggies and winter is the perfect time for them. I've tried mashed cauliflower as well but always end up liking it better steamed or roasted instead.

    I too have tried the mashed cauliflower but it is so not like Ruby Tuesday's. I love it though. Your on fire girl and i'm so very proud of you. Have a wonderful Wednesday.
