Heard on SparkPeople radio not long ago that we should be eating fish two times per week. Fish is expensive in my opinion, and we don't have it very often. I'm making a commitment to serving it once a week.
Searching for good, inexpensive recipes to add to my repertoire. Here is the good news, bad news on this salmon patty recipe.
Canned Pink Salmon Patties

(This is one serving. The recipe serves 4. I made them into 8 small patties)
I made a couple changes to the recipe. I used four green onions instead of white onion because I had some in the fridge that needed to be used. I skipped the bell pepper and doubled the seasoning (it just felt right).
These were quick, easy and inexpensive. I loved them. The kids loved them. The husband despised them. He actually used the word "despise". I think he has some repressed childhood memory involving a salmon patty. I asked him if he would try them with tuna and he said yes. Will give that a go in a couple weeks.
If you like salmon patties, try these. The old bay seasoning and chili powder really gave them flavor. I'm looking forward to the leftovers tomorrow!
