Dinners and Workouts Week of 2/24

I didn't post my plan last week and guess what? I didn't follow it! Putting my plan out there for all to see really motivates me to follow it.

Sunday
Workout - Kettlebell video and walk
Dinner - sausage & potatoes with veggies. This was on the menu last week but didn't get made. I cut up sausage, potatoes, and onions, toss with a small amount of olive oil and roast in a 400 degree oven for about 30 minutes.

Monday
Workout - Treadmill. Coach Jenn's speed workout.
Dinner - chicken bacon ranch sub, tots and fruit. It is cooking with mom night. Easy for them to help put together and everyone loves it.

Tuesday
Workout - Kettlebell video.
Dinner - salmon patties, rice, veggies. Heard on sparkpeople radio recently that we should be eating fish 2x per week. Shooting for 1x per week for now. Trying this recipe for the maintainers' cooking game. Review to follow!

Wednesday
Workout - Treadmill. Coach Jenn's speed workout.
Dinner - pulled pork sandwiches, tots, fruit. I make this recipe in bulk and freeze dinner sized portions. Supper's already done!

Thursday
Workout - Kettlebell video.
Dinner - lentil tacos, raw veggies. I've made this several times in my rice cooker. Going to try it in the crock pot this time.

Friday
Workout - Treadmill. Coach Jenn's speed workout.
Dinner - chicken tetrazzini, veggies. Another gem from the freezer. Most recipes that make one 9x13 casserole will make two 8x8 casseroles. Perfect to make one and freeze one.

Saturday
Workout - Rest day or walk.
Dinner - ribs, cheese fries, roasted broccoli. I try to do one treat dinner per week. The cheese fries are baked, not fried and we will have a large serving of broccoli, so this meal isn't as bad as it seems.
