So when I first made this I made it more like a spaghetti sauce... this time not so much. And it turned out 1000000x better mmm mmm.
2-4 spicy sausage(depends on how much you want to make) sliced into coins
1 onion sliced into chunks
1 bell pepper, color of your choice
1 small zucchini
1-2 hand full of mushrooms, sliced how you wish
3 handfuls of spinach
1 jar canned tomato
garlic, mustard, salt and pepper to taste
(you can change up the veggies to your taste and add more or less if you wish!)
cook sausage, onion and mushrooms for a while (until sausage is nearly cooked).
add rest of veggies (not canned tomatos) and cook until sausage is fully cooked.
add tomatos and seasonings and bring to a light boil, should reduce some of the liquid or you can simmer for a while. depending on how hungry you are/how much time you have.
serve over quinoa or other grain or pasta. I added a little bit of cheddar cheese to my bowl and it is sooo yummy will make again and again!
