Meal Plan for 2/23/13 through 3/1/13

Well, itís the last week of February, which means Spring is getting closer and closer. Iím actually home today on a snow day from work. We got about 5Ē, which isnít a ton, but all the roads are pretty icy so I elected to stay home. Thankfully I remembered to bring my work laptop home with me. I will say, I'm sore as heck from snow shoveling!

Things are still a bit crazy around here, but Iím pretty much not counting on J being home for dinner at all during the week now. So, youíll see my meal plans will be a bit different. This coming week, Iíve basically picked two recipes that both make 4 servings, and I will just munch on the leftovers from those throughout the week. I am also still doing our ďspecialĒ dinners on Saturday nights. This week itíll be steaks with blue cheese butter, baked potatoes, and asparagus. The rest of the week Iím trying to keep it pretty light. So, hereís the other two meals Iíll be making this week, most likely on Sunday and Monday nights.

Chicken Cacciatore Risotto
I didnít end up making the butternut squash risotto this past week after all. I decided the protein count just wasnít good enough. So, this next week Iím going to make this risotto. I love risotto, and while it requires some attention, I find the cooking process for it to be rather soothing and relaxing. Lots of stirring. Iíll use more chicken than it calls for in the recipe, probably more like 12 ounces. Total calories is 511 per serving, with 4 servings.

Hoisin Pork with Rice Noodles
. Like the first line of the blog says, ďThrow it all together and call it dinner? Alrighty then, I will.Ē. I like meals like this, pretty much done in one pot, where you can change out the protein and vegetables to be whateverís on hand or good in the store. I have around a pound of pork chops to use up so Iíll be using those, and then Iíll use the carrots like in the recipe, and probably also throw in green beans since theyíre on sale this week. Iím not going to use the peanut butter and peanuts, because while Iím sure theyíre great in this recipe, it makes the calorie count pretty high. I am going to make this as 4 servings, and each serving is 442 calories.

So thatís it for this week, sorry itís not more exciting!

    Thanks for your recipes! I think I may try the Hoisin pork. You might try reduced fat peanut butter. I love using it in my peanut butter cookies! You can't even tell the difference. emoticon
