I made these protein bars today (I have made them before, but it was a long time ago). They are so good! Wanted to share the recipe
1/2 cup brown sugar
1/4 cup light peanut butter
1/4 cup milk
1/4 cup honey
2 T canola oil
1 tsp vanilla
3/4 cup whole-wheat flour
3/4 cup oats
pinch of salt
1/2 cup raisins or dried cranberry
1/2 cup chocolate chips (I actually used less)
1/4 cup sliced almonds and/or 1/4 cup pumpkin seeds
1/4 cup shredded coconut (optional, I didn't use it)
2 T ground flaxseed
1. Preheat oven to 350
2. In a large bowl, stir together brown sugar, peanut butter, milk, honey, oil and vanilla. In a small bowl, stir together flour, oats, baking soda, and salt.
3. Add oat mixture to peanut butter mixture along with raisins/craisins, chocolate chips, almonds, sunflower/pumpkin seeds, coconut, and flaxseed; stir until just just blended.
4. Spread batter into a 9x13 inch pan that has been sprayed with nonstick spray. The mixture will be sticky- it's easiest to use your hands, but dampen them first. Bake for 20-25 minutes, until golden. Cool in the pan on a wire rack before cutting into bars.
