What's Cookin' Good Lookin' Week 3

This week I made a Roasted Red Pepper Pesto Pasta: www.aspicyperspective.co
. I also added about 14oz of spicy italian chicken sausage to add in a bit more protein. I also discovered that I did not have any whole grain pasta so I just used regular rotini. In the end, it wasn't super "light" at 577 calories, but it was very very very tasty with a good kick that I like. Plus, it's pretty :)
Also, this dish was very quick to prepare. My chicken sausage was raw so that took the longest to cook. The pesto takes next to no time to put together in the food processor. The whole dinner was done in under 30 minutes.
Also, this made 6 servings and since I'm on my own this week, I am all set for lunches and another dinner!
