AMAZING FOOD

My wife made me the most amazing Mexican Enchiladas tonight.
And all I had was 2 Whole Wheat tortillas topped with light cheese and stuffed with vegetarian refried beans (very low cal) and topped it off with nutritious Enchilada sauce, Then she cut up half a tomato and lettuce and one celery stalk on a seperate plate to eat alongside my happy meal...mmmm so good.

    Sounds good. I think I would have added some marinated chicken to up the protein, but that's me. It's always nice to find ways to make satisfying food and still reduce the caloric load.
