Up with veggies, down with nuggets!

I need to get a handle on how I'm eating. I'm eating portions that are too big, and I'm not eating enough fruits and vegetables. The freggie thing is ridiculous, because I love vegetables. I'm just being lazy about planning my meals and snacks and packing my lunches for work. Part of the problem is that I am not giving myself enough time in the morning to get lunch ready, so there are days when I don't pack anything and end up eating the same lunch my students are having that day (which is generally salty, processed crap. Think chicken nuggets and instant mashed potato. Yuck.) What I need to do is take a few minutes in the evening to pack breakfast and lunch, or at least to plan what I am going to pack.

Goals for this week:

~plan or pack lunch each evening after dinner

~log food at least 2 days this week (I hate logging my food. I cook from my own recipes so much that it is really tedious)

~drink a glass of low-sodium tomato juice every day. I love it and I have a jug in my fridge right this minute, so that's no big chore.

~Make a simple vegetable soup that I can add to my meals this week.

Easy, peasy lemony squeezy. I've got this!

    i sometimes make 5 sandwiches on sundays and freeze them . this week i have been makeing two salads at once since i dont go heavy on the dressing it doesnt get to soggy. i love veggies the price has gone up in teh grocery store i need to get the garden going soon

    Your plan sounds very similar to mine - I pack the lunches (and my breakfast and snacks) for myself and my fiance in the evening after dinner. I'm *terrible* at getting up on time in the morning, I barely have enough time to start the coffee pot and feed the cat so pre packing is just what works. good luck!

    I am having a much easier time packing my lunch by making a bunch of single serving size portions of fruit on the weekend or when I get them home from the store (little disposable ziplock containers work and do fine in the dishwasher). I take about 5 of them to school with me each day along with a quick salad, some protein, and some crackers. The more you make ahead of time, the easier it is to throw them in an insulated bag and go. I am trying to do it on the weekend because at night, after a long day of teaching, etc., I just don't care to bother. Good Luck!

    YOU GOT THIS!!! You could also bring a bag of fruit that you like for your desk for the week. If you forget to pack... guess what you will be eating.

    I've been trying to increase my veggies, too. You can eat so much more food for so few calories!! Veggies are so filling!!
