In the fall, I read Dave Ramsey's book, Total Money Makeover. Since then, DH and I have really buckled down and paid off some debt. Very proud of what we have done so far, but still have a long way to go. I've always been a very frugal grocery shopper, but we would eat out several days a week. People will say that it really adds up, but until you put pencil to paper, you don't realize how much IT REALLY ADDS UP!!
I've been cooking at home almost every night. Once a week, I plan a special dinner. One where I spend a little more time and money and don't worry so much about whether the kids will eat it (they had corn dogs).
Enter this delicious shrimp pasta dish. Funny thing though, even though this was our splurge meal, the entire recipe cost less than $7!!
Linguine with Spicy Shrimp
I used thin spaghetti instead of linguine, because I had a bunch of it in the pantry already. I also cut it back to 6 oz of pasta instead of 8 oz. Just a personal preference really. I'm glad I did, because this was so good that DH and I really make piggies of ourselves and ate the whole recipe!
This was quick and easy and I will definitely make it again!
