~ Bacon & Cheese Crustless quiche, etc. ~

... so I had time to prepare the slow cooker quiche recipe that I mentioned to you last week. Here are pics of it... ... finished product

I love the taste of it, very rich dish. I am going to use this as a protein/veggie meal. Here is the recipe if you would like to try it:


1 tablespoon butter
10 eggs, beaten
1 cup light cream
8 ounces shredded reduced fat cheddar cheese {about 2 cups}
1/2 teaspoon black pepper
10 pieces of bacon
10 ounces package of frozen chopped spinach {thawed, drained and pressed dry}


1.) Grease the slow cooker with the butter (leave excess in the crock); set aside

2.) In a large mixing bowl, combine the eggs, cream, cheese and pepper & spinach, then add to the slow cooker. Sprinkle the bacon over the top of the mixture. (... I actually mixed the bacon in and used some on the top as well)

3.) Cover and cook on LOW for 4 hours. Do not overcook or the quiche will be dry.
