~ Bacon & Cheese Crustless quiche, etc. ~

... so I had time to prepare the slow cooker quiche recipe that I mentioned to you last week. Here are pics of it... ... finished product

I love the taste of it, very rich dish. I am going to use this as a protein/veggie meal. Here is the recipe if you would like to try it:

Ingredients:

1 tablespoon butter
10 eggs, beaten
1 cup light cream
8 ounces shredded reduced fat cheddar cheese {about 2 cups}
1/2 teaspoon black pepper
10 pieces of bacon
10 ounces package of frozen chopped spinach {thawed, drained and pressed dry}

Preparation:

1.) Grease the slow cooker with the butter (leave excess in the crock); set aside

2.) In a large mixing bowl, combine the eggs, cream, cheese and pepper & spinach, then add to the slow cooker. Sprinkle the bacon over the top of the mixture. (... I actually mixed the bacon in and used some on the top as well)

3.) Cover and cook on LOW for 4 hours. Do not overcook or the quiche will be dry.

Calories: 440
Protein: 24g
Net Carbs: 3.5g
Fat: 36g
Cholesterol: 440mg
Sodium: 631mg

Cook time: 4 hours on LOW SETTING
Servings: 6

    Hey Dee,

Just stopped by to let you know I cooked a modified version of your dish and it is great. I made seven 8 oz servings of the dish. With not consuming so much fat, I got the serving size down to about 225 calories per serving.

    Hey Dee,

Thanks for the recipe. Instead of the butter can you just use spray? It looks like something I could try. Need something different for breakfast. Has too much fat for me but I would try with egg white maybe and half the egg yoke with maybe Canadian bacon. How big is a serving size?

    OH my ds, son inlaw and myself would love it, My dd is vegetarian and my hubby is lactose intolearant, my dil I dont' know but thinking with 3 of us that would warrant making it LOL
