I tried a few new things this weekend. For Saturday's breakfast we had pancakes with hemp and flax seeds added, served with Earth Balance "butter", maple syrup, berries and vegan sausage patties. And coffee w/ Silk creamer.
I made some baked lemon/pepper tofu, modified the recipe from "Betty Goes Vegan", and served it with a dish of roasted zucchini, mushrooms, onions and tomatoes. And that's a drizzle of Goddess dressing on the tofu.
Sunday's breakfast was a vegetable-tofu scramble with some chopped Tofurkey sausage added, and some perfectly roasted red potatoes. And I made some adorable tiny whole grain cinnamon rolls! And coffee, of course.
I've been making variations of "spa water" lately. This one is cucumber, lemon, orange and ginger. So pretty!
And I made something that I've been craving for MONTHS: sloppy joes! Remember those? I used soy crumbles and I had to give in to my compulsion to add vegetables to everything, so I added peppers, onions, broccoli and kale.
I wanted to make my "joes" adult, so I toasted a nice multi-grain crusty baguette that I'd hollowed out, really stuffed it in there, and served it with a reasonable tumble of sweet potato chips. It was just what I'd been craving too----yum! And not sloppy at all, they were quite tidy, thank you very much!
