Gluten Free Chocolate Chip Cookie Dough Cupcakes...kind of a fail

Sunday, February 17, 2013

The recipe I used was not intended to be gluten free. I have used it almost as written (it calls for boxed cake mix and I made mine from scratch) but it worked out the way it was supposed to.

I made gluten free chocolate chip cookie dough and froze the balls. Then placed a frozen ball on top of each scoop of batter in the cupcake tin.

When I checked on them to rotate the pan, I knew it was not going to work right. The cookie dough is supposed to sink into the cake batter but that didn't just sat right on top. I had forgotten just how dense that batter was.
They came out of the oven looking very much like they had gone in.

It was easily covered in icing but I was still disappointed.

After my cupcake baking disaster, my husband and I went out for a nice run 6.64 miles (6.1 running) and after a shower it was off to lunch with my brother and his girlfriend.
Happily the cupcakes tasted fabulous :-)

Hmmmmmm- interesting! I am throwing a baby shower @ the end of March and the mom-to-be is gluten free. Trying to decide what friendly snacks to have out.

I've had that happen with other recipes. Which GF flour do you use (that you like)? Your cupcakes still look great and I'm sure no one complained the cookie dough didn't sink!

Sometimes our failures are our best successes! Cupcake + chocolate chip cookie + frosting sounds divine!

It's always nice when what we think is a failure tastes good anyway! Glad you got in a nice run and some fun too!

sounds interesting but...I'll stick with my cookies separate from my cupcakes
I watched the video so I got to see how they were supposed to turn out inside and out

Great job with the run and kitchen experiment. I never thought of putting cookie dough in a cupcake. Awesome. I veganized a coconut macaroon recipe for the first time today and am in big trouble because they are super yummy.

Well, you certainly figured out how to mask it (isn't frosting a wonderful thing?)! Glad they tasted great. I've always said I'm way more about flavor than I am about presentation. I'm going to have to file that recipe. Good run too! I'm so happy you are doing better.

I was going to say that I bet they tasted great. Isn't that what icing is for?
6.4 miles, that's great! Have you signed up for another race yet?
