Gluten Free Chocolate Chip Cookie Dough Cupcakes...kind of a fail

The recipe I used was not intended to be gluten free. I have used it almost as written (it calls for boxed cake mix and I made mine from scratch) but it worked out the way it was supposed to.

I made gluten free chocolate chip cookie dough and froze the balls. Then placed a frozen ball on top of each scoop of batter in the cupcake tin.

When I checked on them to rotate the pan, I knew it was not going to work right. The cookie dough is supposed to sink into the cake batter but that didn't happen...it just sat right on top. I had forgotten just how dense that batter was.
They came out of the oven looking very much like they had gone in.

It was easily covered in icing but I was still disappointed.

After my cupcake baking disaster, my husband and I went out for a nice run 6.64 miles (6.1 running) and after a shower it was off to lunch with my brother and his girlfriend.
Happily the cupcakes tasted fabulous :-)
