The wind is whistling, the snow is flying and it is a perfect night for my Fish Chowder, Down East Style. I just added this to SparkRecipes since I had not taken the time to enter it before, but I wanted to put it through the recipe calculator. So if you choose to try this recipe, please be kind, this is only the second recipe I've put in Sparkrecipes that anyone can see.
I like to have it with a nice crusty whole wheat roll if I have enough carbs left in my plan for the day. To make it a complete meal add a small tossed salad.
Where I come from, we don't like really thick chowders, and I don't add any thickeners to mine, I depend on the starchy potatoes to slightly thicken it for me.
I'm just waiting for it to finish cooking so thought I'd post this blog while I'm waiting.
Sorry it has been a while since I blogged, I have been working 12 hour days for the last 2 1/2 weeks. This is our busiest time of year and we are short handed. My diet and exercise have, unfortunately, been pushed to the side during this time. I haven't completely gone off the rails with my eating, but I admit to grabbing some snack items I would not normally eat when I was feeling particularly stressed. As for exercise, it did not happen, I'm going to have to turn my 8 week diabetic challenge into a 12 week challenge.
Of course in the middle of this busy time I was sick for a couple of days.
But now it is time to get back to tracking and exercising. This week I will be taking the time to use the nutrition and exercise calculators. Using them keeps me centered and helps me to focus on my priorities.
I have been checking in each day and gaining inspiration from all my wonderful Spark friends.
This week we should not be as busy, and even if we are I am not volunteering for any more overtime. I'm getting too old for 12 hour work days.
