Have not been doing well with my eating this week. Thanks Easter candy! I cannot resist a box of chocolate. I have cooked a lot of veggies though. I made a tasty chicken enchilada soup this week that was muy tasty! Yesterday, I braised so cheap little steak cuts over a bed of carrots and leeks. I poured a small can of V-8 juice over the veggies. It made a nice pot liquor to sauce the side dish of cous cous I prepared mixed with some green peas. The kids enjoyed this meal too.
I was losing my zeal for fitness activities, but I think I'm back on the wagon again. I skipped a day for no apparent reason. I did several short sessions this week so I was unable to reach my weekly calorie-burning goal last week. Today I went for nearly an hour to get a good start on this week's goal.
The one goal I'm doing great at is glugging my water. Yay water! If only 64 ounces of water was all it took to get us thinner. I am doing my water!
Hope all of you are having a better time of it than I am. I am going to watch myself the rest of today and tomorrow so maybe I can be near my low weigh-in from last week. I knew it was too good to be true to get down so low, but I really need to get on the good foot to bust down into a new decade! I need to get my focus back!
