Paleo Valentine's Dinner

We had a good paleo Valentine's Day dinner and no, it was not at a fancy-smanchy (and expensive and crowded) restaurant. The menu was simple - roasted chicken thighs with sauteed spinach and sweet potatoes cooked in coconut oil. Dessert, though, was special, as my daughter lovingly made heart-shaped tarts out of crushed almonds and hemp seed, covered them with cream cheese, and topped with blueberries and strawberries. Very-berry good!

    That is a fancy smanchy dinner; it all looks delicious! Very exciting to have your whole family onboard with the Paleo diet. My husband says he is on the Paleo-plus diet. He eats Paleo with me plus anything else that he feels like eating :-) emoticon
