Chicken parmesan

Every other day or so I add a new "test food" to the already established "friendly foods" and it was time to test tomatoes. A lot of people are reactive to tomatoes and I know my DD who has rheumatoid arthritis has been told to avoid them as they can cause inflammation.

There was a nice recipe for chicken parmesan in The Plan cookbook and I thought I give it a go. One small problem - I don't have a broiler... no biggie, I dumped the cheese on top of it on my plate and had melted instead of grilled cheese :) It still tasted great!

Onions and garlic sauteed with 1/2 zucchini and 1 tomato, basil and a little salt and pepper/ I added slices of cooked chicken and when heated through put it on my plate, topped with manchego and a little parmesan with a little salad on the side.

It was delicious and I am happy to report that tomatoes passed the test (no gain)
