Chicken parmesan

Every other day or so I add a new "test food" to the already established "friendly foods" and it was time to test tomatoes. A lot of people are reactive to tomatoes and I know my DD who has rheumatoid arthritis has been told to avoid them as they can cause inflammation.

There was a nice recipe for chicken parmesan in The Plan cookbook and I thought I give it a go. One small problem - I don't have a broiler... no biggie, I dumped the cheese on top of it on my plate and had melted instead of grilled cheese :) It still tasted great!

Onions and garlic sauteed with 1/2 zucchini and 1 tomato, basil and a little salt and pepper/ I added slices of cooked chicken and when heated through put it on my plate, topped with manchego and a little parmesan with a little salad on the side.

It was delicious and I am happy to report that tomatoes passed the test (no gain)

    Interesting about the tomatoes. I love this dish, yum! Now I know what to make this weekend for dinner.

    I like the yellow tomatoes as they have a lower acid content. I keep a container of
them on the counter all the time for a grab one when I walk by for my healthy snack.

    I had never heard that about tomatos and I sure eat a lot of them. I eat like 2 cups per day! they are my favorite food. I guess I need to think about and see if they are reactive for me.
I love Italian favorite. I would love this dish.

    I love that recipe too. That's how I tested tomatoes and was thrilled to have passed because I like the combinations of flavors when tomatoes are added. You're doing great!!

    This looks so yummy! I am glad that you passed the tomatoes test. They are in a lot of dishes. I am looking forward to being able to eat all the different recipes on "The Plan".
