Meal Plan 2/16/13 through 2/22/13
Well itís another week of the unknown around here. J might be going out of town, but he might not. So Iím planning meals where if I eliminate 2 of them, it will be OK as they are made mostly with things I already have. I guess itís a good exercise for me, to not be able to plan out everything in advance. Basically to not be a control freak. Not much otherwise to talk about, so Iíll just get to it!

LUNCH: Not sure yet.
DINNER: BRAISED SHORT RIBS IN BEER WITH BACON AND RED ONIONS This is going to be our belated Valentineís Dinner. It is another recipe from the ďCookbook of the MonthĒ from my other cooking board. It is served with mashed potatoes, and I will probably do a side of asparagus as well. This is my ďnon-trackingĒ meal so I didnít figure the calories.

LUNCH: We are traveling up to my auntís home to have lunch there with my family.
DINNER: ROASTED RED PEPPER PESTO PASTA (say that 5 times fast) - www.aspicyperspective.co
. This sounds really interesting, and I love roasted red peppers. I also plan on adding some spicy Italian chicken sausage to bulk it up a bit, and maybe some broccoli too. I have it as 6 servings, which will be pretty large servings, at 590 calories per serving.

LUNCH: I have the day off work, and we have a hockey game to go to at 1pm, so I am planning on eating an early lunch, probably either the pasta leftovers, or if there is some short ribs left over.
DINNER: STEAK TIPS WITH PEPPERED MUSHROOM GRAVY - www.myrecipes.com/recipe
. I have some sirloin steaks in the freezer, and some whole wheat egg noodles in the pantry, and this looks interesting. I plan on serving it either with roasted asparagus, or broccoli (it is on sale this week). I have it as making 4 servings, at 535 calories per serving.

. This is the dish Iím planning on making this week for the ďWhatís Cookiní Good LookiníĒ Challenge on the Maintainersí board. However, if J ends up going out of town I am not going to make it (Iíll use one of my other meals for the challenge), since I think itís something heíll really like. I plan on serving it as you see it in the photo, except I will do the spinach on the side with a vinaigrette dressing. For 2 servings itís 513 calories, which will probably go down once I weigh the actual meat Iíll be using.

I have made this one before, it is SO easy and everything in it is pantry staples. J also loves it. Iíll serve it with mashed potatoes, and a veggie, most likely broccoli or asparagus (Iím so exciting, I know). A 6oz serving is 427 calories.
